Pandan Raisins Bread Gluten Free Gums FREE

When i was writing this pandan raisins bread recipe, the house was finally calm because the kids were asleep. Otherwise, it would've been total chaos! Haha!


This year, the whole these 2 years to be exact, I've made a lot of gluten free bread recipes, including gluten free sourdough and most recently, GF artisan bread. You can check out my results below.

 In this post, i wanna share a simple yet tasty bread's recipe that doesn't use any gums at all! 

If you've read my article of My Binder Ratios, you'll know i usually use 2 types of binders to get bread that's super soft and foldable.

But, today. We don't need 2 binders anymore. Just psyllium husk.

This bread tastes amazing and doesn't have gel-like texture because I reduced the amount of psyllium husk in this recipe.

Actually, this is my 2nd R&D attempt.

First one, i used higher amount of PH& only 2 types of gluten free flour, but the results weren't satisfying.

As you can see below, texture not too good for me. Hehe. Too chewy and easily loses moisture faster.

So, for 2nd version below, i reduced the PH and combined 3 types of flour to avoid an overly chewy texture in my bread. And it turns out perfect!


This bread smells sooo good (pandan), soft and delicious!

However it loses moisture more quickly compared to my other breads.

But this isn't a big problem because you can spray the bread with water then toast it again to restore it's original texture which are soft and bouncy.

In this recipe, i developed new skill in Gluten Free Bread making. I'm not sure if anyone else has tried using this technique before, which is whisking the egg whites until stiff peak form.

This technique helps the bread look beautiful, maintain a stable shape and taste good even though without xanthan gum
